Do something different with potatoes! Sliced roasted potatoes with tons of flavor. The other day on Pinterest I found this pin ( Pinterest Pin | Recipe Post ) I’m not a big Pinterest user but I have been trying to use it more to grow my reach and readership. This recipe caught my eye and wanted to try it out and I knew my husband would be in love with it at well. My husband loves potatoes and can cook them WAY better than me. I’ve been looking for years for a good roasted potato recipe and I think this is my new go to recipe and impressive when guest come over.
We love potatoes in this house! Roasted potatoes are one of our favorite side dishes to have and I try to make it as often as I can. Thanks to this new recipe we will have lots of roasted potatoes with our meals now.
Don’t these look so good? These were so simple to make and so glad that I stumbled upon these crispy yummy potato things of heaven. OKAY so my picture doesn’t look just like the recipe I found but they are still really good. I need to slice them a little bit thinner and next time I will cook them for an hour instead of 40 mins like the recipe said. I like my potatoes a little more crispy and browned; my grandma always taught me browned is flavor. These would pair great with chicken, steak or pork. I am so glad to add this to our family dinners.
6 Medium Size Potatoes
2 Tbsp Olive Oil
Freshly Ground Black Pepper
Preheat the oven to 425˚F. Put the potato on a chopping board, flat side down. Start from one end of the potato, cut almost all the way through, at about 3 to 4 mm intervals.
Arrange the potatoes in a baking tray and scatter some butter on top of each potato. Then drizzle the olive oil and sprinkle some sea salt and freshly ground black pepper.
Bake the potatoes for about 40-60 minutes or until the potatoes turn crispy and the flesh is soft.
